Port
California
Our Fairbanks’s Ruby Port has hints of cinnamon, clove and dark chocolate on the nose, followed by intense, full bodied flavors of raspberry, cherry and plum with an acidic medium-long finish.
Serve as an after-dinner aperitif or pair with a roasted duck, pâté, pork medallions or chicken with mushrooms. Add our Tawny Port to chocolate cakes, marinades and sauces to add richness and flavor, or as a reduction sauce for savory dishes such as stews and casseroles.
Sherry
California
Our Fairbanks Sherry has a salty, nut and toast aroma, followed by full-bodied flavors of almonds, butter, cinnamon and lemon, which creates a crisp, nutty and slightly tangy flavor on a medium-dry finish.
Serve as an after-dinner aperitif or add to a cocktail such as a Sherry Cobbler, along side simple syrup and an orange half-wheel, or a Rye Witch with rye whiskey, orange liqueur, angostura bitters and topped with an orange peel. Add our Sherry to pan sauces, soups, roasts, and even desserts to add sweet and nutty flavors to dishes.
Cocktail Pale-Dry Sherry

Our Fairbanks Cocktail Pale-Dry Sherry has a nutty aroma, followed by full-bodied flavors of salt roasted almonds, dried apricots and preserved lemon, which creates a dry, crisp yet tangy medium dry finish.
Served chilled as an aperitif or add to a cocktail such as an Adonis, along side sweet vermouth and an orange peel; or a Bamboo cocktail along with dry vermouth, angostura and orange bitters and a lemon twist. Add our Pale-Dry Sherry to pan sauces, soups, roasts, and even desserts to add sweet and nutty flavors to dishes.
Cream Sherry
California
Our Fairbanks Cream Sherry is a full-bodied and velvety blend of flavors consisting of walnut, fresh figs, toffee with a hint of lemon and honey on a sweet, and slightly nutty finish.
Serve as an after-dinner aperitif either over ice or on the side with a cup of coffee. Add to a cocktail like the Tootsie Roll, along side rye whiskey, chocolate bitters and topped with a maraschino cherry. Add our Cream Sherry to a mushroom soup, pork chops with sherried mushrooms or try in desserts, such as strawberry trifle or a Bundt cake.
White Port
California
Our Fairbanks White Port has aromas of wood spice, nutmeg and citrus with flavors of dried cranberry and raisin, chocolate and honey on a sweet but bright acidic finish.
Served chilled in a white wine glass, paired with olives or roasted almond or add some tonic water and a slice of citrus for a refreshing summer drink. Add our sweet White Port to desserts or use to enhance stews and sauces with more complex characteristics.
